Really? Since my mother developed Type 2 Diabetes due to her pancreatic cancer we have been switching foods over to healthier alternatives. We've never had problems with cooking and baking with honey. Due to it being heavier and sweeter than granulated sugar you have to cut back (1 cup sugar = 3/4 cup honey). And you need to watch it as it cooks or bakes, due to a tendency to burn, but other than that it's perfectly healthy.
We also substituted the cream for pure coconut milk and added a dash of cinnamon as it baked. Tasted great!
