This looks soo yummy! Just a question, would this work okay with ripe bananas? Or would it turn to mush or something? (I have all those ingredients at the moment but the bananas are really ripe)

Out of curiosity, my mom is diabetic. Do you think honey would work just as well instead of the sugar?

I'm sure that would work, but do you know if it's safe to cook honey? I vaguely heard it isn't, but haven't had a chance to look into it seriously yet.

Really? Since my mother developed Type 2 Diabetes due to her pancreatic cancer we have been switching foods over to healthier alternatives. We've never had problems with cooking and baking with honey. Due to it being heavier and sweeter than granulated sugar you have to cut back (1 cup sugar = 3/4 cup honey). And you need to watch it as it cooks or bakes, due to a tendency to burn, but other than that it's perfectly healthy.

We also substituted the cream for pure coconut milk and added a dash of cinnamon as it baked. Tasted great! =D
