Based on a recipe by ichigoshortcake.com. I daresay the chorizo can be replaced with pepperoni or similar, and the cheddar with gruyere or Swiss cheese or the like. I tried it once with chopped tomatoes and somehow it made a difference for the worse (in my taste): I prefer it with whole peeled tomatoes, they largely decompose during cooking anyway.

I'm guessing this is Spanish chorizo, and not the Mexican Chorizo I'm accustomed to since you can't slice Mexican Chorizo (it's more like a paste in a plastic sausage tube).

Just made it, but I squeezed out the chorizo and used it in crumbles instead of slices. It came out very tasty! I'll cook it again, thanks for the recipe :D

Just made this for my famly and I cam out really good. Although I had to guesstamate with the amount of mushrooms to put in the sauce cause I didnt have any whole mushrooms. I think I put to many in. But any way, over all it came out tasting really good. I even added some artichokes and they were a nice touch. Searved it with a salad. Thanks for the recipe.

i am going to be making this today but without the garlic, mushrooms or thyme, i will also be using diced chorizo as my husband bought the wrong one, same goes for a different shape pasta :giggle:

Oh, they have this at work sometimes. It's super yummy! It's a little different though, since they add clams and make it more of a seafood dish.

Just a quick note to those who live the in Americas, keep in mind there's different types of chorizo, and Mexican chorizo is made with chili peppers, rather than smoked paprika. If you want to avoid the heat, avoid Mexican chorizo and go with Spanish style or Puerto Rican, as they're much less hot and more smokey and sort of sweet.

I was simply surprised of the recipe you've submited, that's all. I just can't imagine that dish as an exotic one, because of that I couldn't contain myself XD
I also thought how would be "chorizo" said in an English accent and I pissed myself (is it that the correct expression? xD)
