I had no idea what lemon curd was before I tried making it for the first time. It's not part of the culture so I had literally never tasted it. OMG. So unbelievably tasty and easy to make, it's hard to believe anyone bothers to buy it premade.

I've used it inside cupcakes to great acclaim, but the dessert I received several requests to make again was a fruit tart: Prepare lemon curd and tart crust the previous day, then on the day you want it fresh, bake the crust fully, allow to cool, spread the lemon curd all over it and cover in fresh fruit (my latest combination was strawberry and kiwi.) Such a fresh, light dessert!

I tried this today, turned out pretty good, I think. (gonna use it for decoration on limoncello cupcakes tomorrow)
Though I looked on the internet for other lemon curd recipes to compare, out of curiosity. Apparently, most of them tend to use less yolk and more lemons (or something like that, different proportions anyway, like juice from 1 lemon per two eggs).
But this works. And it's delicious.
(Love the presentation of the quick food recipes by the way, so simple yet so clear).

I disagree with Saito20, as you pointed out to him, anything is fine in moderation, and a dab of this stuff will do ya fine. Take a bit and spread it on toast and it taste lovely. It gave me a fresh tasting, sweet treat and I already had all the ingredients in my fridge. :love: I need to try it in a bit of plain, greek yogurt, I bet that would be nummy!
