MY GOD THIS IS TASTY! This is modified from this recipe by Abel & Cole, the wonderful organic delivery service I'm now addicted to. Seasonal, pesticide-free, bee-saving fruit and veg on my doorstep every Wednesday? Hell yeah!!
Anyway, this really titillated my tastebuds with tangy notes popping up in each bite. I used half a fresh chilli instead of powder, and sage and oregano as I had those on hand. If I had made enough for 4 I would still have gobbled it all up...

Just a question: the illustration makes it seem you use the potatoes unpeeled. Is that correct? I've had unpeeled baked potatoes, but never in this type of food.

Yes, they're unpeeled (just well scrubbed), although you can peel them if you prefer or if they have a skin that's too tough to eat.

Made it today, it was great. Don't be stingy with the chilli, it really brings out the orange aroma.

We made this last weekend, though we used sweet potatoes instead (where are all the potatoes?! even our big box grocery store didn't have any) and we ended up mashing them because, well, I got distracted and they cooked a little too long. Oops! Still very wonderful, very flavorful! And easy enough for me to do, well, once we have regular potatoes on hand (sweet potatoes are hard to cut!).

Ooh! I have two questions: are the herbs completely necessary? Also, any specific measurements for the chili powder and salt? :)

They add a lot of flavor, but you can use dried :) No measurements, add to taste – start with a pinch and add if you feel the need...
