Here in the UK, the smell of autumn is already in the air, and that means soup days are returning. Here's another Lebanese home recipe, a classic soup that will remind everyone back home of their childhood.
An even more basic version of this is something we eat when we have stomach or gastric disorders that make anything else hard to swallow: simple cooked rice mixed with room-temperature yogurt. The live cultures in it give the gut a welcome hand (it's the classic gastroenteritis meal).

By the way, if you look at my profile page and scroll down, I'm keeping track of the book's progress in a widget where you can see the intended contents. I think I've settled for the number of recipes per category and I'm working on completing them first.

A couple of "rules":

Umm... Just wondering... Does boiling the yogurt kill the live cultures?
(Random curiosity, I know, but it happens to Biology students at times- or at least, to those whom I know besides myself...)

Possibly but I'm not sure since it doesn't boil long. I don't know what pasteurizing entails exactly!

Question: how well does this soup freeze/thaw? One thing I like to do with soup is freeze it until I'm ready to eat it and then heat it up again.

Hmmm.... My mom always freezes these, but I'm not a fan. I can't remember if it does something to the yogurt or if it's just my distaste of freezing. You may want to experiment the first time, eat some of it freshly made and freeze the rest, and see how that compares when it's reheated :)
